Something good

Yesterday afternoon I made these pancakes for today's breakfast (because I had to be out the door at 7:30).  They got a pretty great review from everyone, but the best one was this text from Sam:

As I have been losing things lately, it behooves me to put the recipe here.  Plus, it will be fun to remember when it was the first time I made them.

  1. 2 eggs
  2. 1 banana
  3. 1/2 cup oats
  4. 1 heaping tablespoon chia seeds
  5. 2 tablespoons pure pumpkin puree
  6. 1/2 teaspoon pumpkin spice
  7. pinch of sea salt
  8. 1 teaspoon vanilla
  9. Maple syrup to serve
  1. 1. In a high-speed blender, blend all of the ingredients until smooth.
  2. 2. Heat a large pan to medium, and add some butter or coconut oil to the pan.
  3. 3. Cook the pancake batter in small or large circular shapes in the pan, flipping when the edges are dry and bubbles start to appear on the surface.
  4. 4. Cook for 1-2 minutes on the opposite side. Repeat with the remaining batter.
  5. 5. Serve hot with butter and maple syrup.
