I received a very special gift today. A gift of time. Three hours to myself at one of my favorite places, this coffee shop.

After lunch we all went ice skating. When Joel had had his fill, the three of us left the two big boys at the rink happily playing pick-up hockey games, and Mark dropped me off at Second Cup. I worked on a communications project for church and still had time to relax and do a little surfing. After skating in the frigid (3 degrees) outdoors, that cup of coffee and the "free time" was MOST welcome. Thank you, Mark.

I love how the whole Walton family gathers in the living room to listen to the radio together. My sentimental side finds the whole scene so appealing. I'm a girl who loves her technology for sure, but I still wish for the simpler times when a good story and someone to share it with was all that was needed to end the day successfully. And so (with the aid of our modern technology) we've been listening more.

We love, but I don't know if we ever downloaded a book for the kids (maybe Eragon and Dragon Rider a couple years ago for a car ride). Now there is (same company) with loads of children's books. We chose The Great Brain and Thursday night we started listening to it. All together. In the livingroom. Just like the Waltons.

P.S. The Great Brain series was written back in the late 60's/early 70's, but somehow I'd never heard of them until this year. If you have boys, I highly recommend!! So fun, so funny.

I was going to describe the conditions (i.e. the happy chaos that is the Billington house sometimes) under which this supper was "invented", but I'm sure it just doesn't matter to the couple people that read this.

(one time I read in Real Simple magazine that most blogs have two readers: the author of the blog and the author's mother. I think that's about right, in my case)

The whole family loved this soup, Sam named it, I'm going to make it again, and I hope you will try it....Mom!

1 lb, cooked ground horsemeat (or use ground beef) seasoned with package of taco seasoning
1 can of creamed corn
1 can of diced tomatoes
1 jar of green salsa
1 can of green chilies
4 cups chicken broth
2 tsp. (or more) red pepper flakes
handful of fresh cilantro (if you have it)

Throw all ingredients in a pot. Heat to boiling and simmer for 10-15 minutes

Spoon into bowls and plop a spoonful of sour cream on the top. Serve with slice of homemade whole wheat bread or whole wheat crackers.
